This is so simple to make and so very yummy.


1 cup mashed, ripe banana
1/2 cup peanut butter
1/2 cup coconut milk
3 Tbsp carob
Garnish: roasted, slightly salted, chopped peanuts

  1. Mash banana and peanut butter together until smooth.
  2. Mix in coconut milk until thoroughly combined.
  3. Divide into four dessert dishes and refrigerate for 1 – 2 hours before serving.
  4. Serve, garnish with chopped peanuts.

Note:  this recipe uses ripe bananas so serve the same day it is prepared.
