This is a very healthy salad filled with all healthy ingredients. Arugula, Spinach, Lettuce, Walnuts, Lemon juice, Olive Oil, Sesame oil and Stevia.
Tamari adds a tastiness to this recipe. I especially like San-J Tamari because it is organic and gluten-free too.
Shiitake Mushroom Salad Recipe
1 pound of Arugula, Spinach, Lettuce
1/2 cup Cucumber
1 cup Shiitake Mushrooms
1/2 cup Walnuts
2 Green Onions
2 Tbsp Lemon juice
1/4 cup olive oil
1 Tbsp Toasted Sesame oil
1/2 tsp Tamari
Few drops of light stevia (optional)
- Wash and pat dry greens with paper towels or spin dry.
- Chop the cucumber, green onions and mushrooms.
- Sauté mushrooms until golden brown.
- Combine dressing ingredients in a large bowl.
- Now, toss all ingredients with dressing.
- Serve and enjoy your shiitake salad with walnuts.
