Arugula Salad with Pecans
Ingredients:
1 pound fresh arugula
1/4 cup pecans, roasted until golden
10 small tomatoes, sliced in half
1 medium avocado, chopped
2 Tbsp. Lemon juice
1/4 cup olive oil
1/4 tsp Himalayan Salt
1/4 tsp Braggs or Tamari
Few drops of light stevia (optional)
Directions:
1. Wash and pat dry arugula with paper towels or spin dry.
2. Combine lemon juice, olive oil, stevia, salt and Braggs in a large bowl.
3. Now, toss all ingredients with dressing.
4. Serve and enjoy your arugula salad with pecans.
