Delicious Mandarin Orange Kale Salad

This mandarin orange kale salad is a smart tasty way to get some healthy greens into a meal. Adding the mandarins along with the sweet bell peppers makes this a very healthy and tasty salad.

I have found that this salad can be a full meal which is filling for dinner.

Kale is a great detox food that is full of fiber and low in cholesterol. It supports normal blood clotting, antioxidant activity, and bone health while nourishing the immune system.

It seems that where ever we go there are bowls full of these beautiful sweet mandarin oranges. With their lose skin making them easy to peel, they are a simple fun treat for children too. The bonus is that they are a yummy superfood full of health benefits. 

They are an excellent source of vitamin c and they are also a good source of vitamin A and a source of B-complex vitamins.  They reduce the risk of liver cancer and lessen the hardening of arteries, especially in diabetics. Mandarin oranges also help fight breast cancer and help reduce the risk of leukemia

WHO recognizes that Onions help relieve symptoms such as coughs, congestion asthma, and respiratory infections. Onions are full of protective phytonutrients, vitamins, trace minerals, quercetin (an important flavonoid), chromium, and unique anti-inflammatory nutrients.

Red pepper is my favourite; I think that is because it is sweeter. The peppers have 2 times as much vitamin C as oranges; red and yellow peppers have 4 times as much.

For this salad, I use my easy to make Olive Lemon Juice Salad Dressing – This olive oil lemon juice salad dressing is always enjoyed by everyone who has it on one of my salads. This is why I created the exact recipe years ago.

It is important to have a healthy salad dressing because it is the salad dressing that makes it a healthy or unhealthy salad.  I love to eat salads with a healthy salad dressing and always make my own salad dressings.

Mandarin Orange Kale Salad

This mandarin orange kale salad is a smart tasty way to get some healthy greens into a meal. Adding the mandarins along with the sweet bell peppers makes this a very healthy and tasty salad.

Ingredients

  • 1 pound fresh kale
  • 2-3 mandarin oranges
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1 small white onion optional
  • 1-2 green onions

Instructions

  • Wash and trim the kale.
  • Peel and separate the mandarin oranges into sections.
  • Slice the bell peppers and onion.
  • Chop the green onions.
  • Toss peppers, oranges, and onion with olive oil salad dressing.
  • Serve and enjoy.
