What makes it extra tasty is the marinated crispy tempeh.  The red sweet beets add a very delicious flavor as well. If you are very busy and just want a quick meal then simple tempeh will work fine too.

Tempeh truly is a nutritious superfood full of health benefits including good protein and vitamin B12.  For vegans, it can be challenging to get enough B12. Beans and lentils are full of good nutrition and have many health benefits but they do not have the essential vitamin B12.  Tempeh has the same protein quality as meat and is helpful in reducing cancer, is a powerful probiotic, helps with weight loss, and more.

Tempeh Salad with Beets and Sprouts

This is a simple tempeh salad recipe that is easy to make and packed with healthy ingredients.  It is full of nutrients from the beets, carrots and sprouts, pumpkin seeds and lots of protein from the tempeh which are all tasty superfoods.

Ingredients

  • Romaine Lettuce A few leaves
  • 1 cup Sprouts Alfalfa, Lentil, Broccoli or fenugreek
  • 1 medium Carrot
  • 1 medium Beet
  • Marinated Tempeh
  • 2 tbsp Pumpkin Seeds Sprinkle on top

Instructions

  • Sauté the marinated tempeh till crispy and golden brown.
  • Arrange the lettuce leaves on a plate.
  • Put the sprouts on top.
  • Slice carrot into sticks or chop into small pieces and place on top of the sprouts.
  • Now grate up the beet and put it on top of the sprouts.
  • Pour on the Olive Lemon Juice Salad Dressing. 
  • Add the Crispy Tasty Tempeh.
  • Eat and enjoy your tempeh salad.
