Tempeh Arugula Salad With Cucumbers Is Tasty

This tempeh arugula salad is quick to make. It is full of very good easy to digest protein from the tempeh.  The superfoods arugula and cucumber add lots of nutrients and health benefits too.

The best thing about this meal for me is the ingredient tempeh. I love the taste of it.  Also, what is amazing about this high vegan protein is that it has vitamin B12 in it. Most of the vegan protein foods like beans and lentils have good nutrition and health benefits but no vitamin B12. It truly is a wonderful superfood with so many health benefits such as being helpful in reducing cancer, is a powerful probiotic, helps with weight loss and more.

I love the tasty marinated tempeh cooked in small pieces. An easy salad for dinner on a hot summer day. I like going out into my garden to harvest arugula for all my salads. That way I know it is super fresh and totally organic.

Arugula with its aromatic, peppery flavour adds a wonderful dimension to a salad and to your sex life too. It is also known by other names such as salad rocket, garden rocket, roquette, rucola, rugula, or colewort. It is creat for cleansing and detoxifying the body as well as reducing inflammation.

Cucumbers are the perfect summer veggie that keeps your body hydrated, strong, and happy.  They hydrate your body and help to flush out toxins. They are good for treating high blood pressure and for weight loss and may help fight cancer and reduce the risk of heart disease.  They are highly alkaline-forming and may help reduce cholesterol and help with diabetes.

This is a very tasty and easy to make salad without lots of chopping.

Ingredients

  • 4 cups Arugula
  • 1 Cucumber
  • 110 grams Tempeh
  • 1 Tbsp Sesame Oil

Instructions

  • Marinate the tempeh, learn how: click on the link below.
  • Break up the marinated tempeh and stir fry it in the sesame oil in a pan until a little crispy.
  • Chop up the cucumber and place them in a bowl with the arugula.
  • Pour on the Balsamic salad dressing, see recipe link below.
  • Now add the Crispy Tasty Tempeh on the top of the salad.
  • Time to eat this delicious healthy tempura arugula salad you made. Enjoy.

Make your Balsamic Salad Dressing – For a change, I occasionally make this balsamic salad dressing. I still put lemon juice in it as I do not want too much of the acid vinegar.  I use just enough vinegar to enhance the flavor. I always get organic balsamic vinegar for my recipes.
