Delightful Pumpkin Stew For One of Your Fall Meals

It is fall, so it’s ‘Stew’ time and I think you’re going to love this ‘Vegan Pumpkin Stew’ recipe! Fall is when I start making lots of vegan stews because they are heartening, nourishing and so easy to make. I have to say that summer is my favourite season, but there is so much beauty at this time of the year. I love walking amongst the beautiful fall leaves.

Now is the time to spend more time in the kitchen creating delicious meals. Most of my recipes tend to be simple mostly because as much as I enjoy creating new recipes when I am hungry I want to eat soon, not in 2 hours.

My meals are always very healthy; they are filled with tasty superfoods. The main ingredient in this pumpkin stew is of course pumpkin which is a low-fat food, high in antioxidants and has a significant amount of Omega 3 essential fatty acids.

Note about pumpkin: It is best to get the small pumpkins that are good for making puddings, pumpkin stew and pies as they have more flavour than those very large pumpkins we use for Halloween. These small pumpkins are packed with more flavour and not watery like those large pumpkins.

Leeks are good for the heart, cancer protection, digestion, and weight loss too. Broccoli is packed full of health benefits for you as well.

Of course, coconut oil is the best healthy oil to cook with and then add all the wonderful spices that add tastiness to this pumpkin stew and health benefits.  Ginger is one of my favourite spices.

This pumpkin stew is a delicious meal for the fall and is as colourful as the season. Everyone I serve it to loves it. It is a meal by itself but can be served with a side of rice or potatoes.

Pumpkin Stew

Ingredients

  • 2 cups Pumpkin chopped
  • 2 Leeks
  • 1 cup Broccoli
  • 2 Tbsp Coconut oil
  • 1 tsp Ginger powder
  • 2 tsp Cumin ground
  • 1 tsp Coriander ground
  • 1/2 tsp Cardamom
  • 1/2 tsp Salt
  • 1 cup white beans, or chickpeas or kidney beans cooked
  • Water to cover the pumpkin
  • Parsley for garnish

Instructions

  • Make sure you have already cooked the beans.
  • Boil the pumpkin in water and cook till soft. (Drain most of the water, but keep some for use in the stew).
  • Then cut up the pumpkin into 1-inch chunks.
  • Chop up the leeks into small pieces.
  • Chop up the broccoli into small pieces too.
  • Sauté the leek in oil until softened, 3 to 5 minutes.
  • Add the cumin, coriander, cardamom and ginger, cook, stirring, 1 minute.
  • Add the pumpkin and broccoli and simmer, uncovered, stirring occasionally for 25 to 30 minutes.
  • Add the cooked beans to the pot and cook till hot.
  • Season the stew with salt.
  • Now enjoy a warm bowl of pumpkin stew this fall.
