Who doesn’t love a yummy onion soup for lunch or dinner? I made this recipe with only very healthy superfood ingredients so it is very good for you. Also, it is a simple soup to make.
Onion Soup Recipe
1 yellow onion, sliced into rings
1 – 3 cloves garlic chopped
1/2 tsp. oregano
2 bay leaves
2 cups water (stock from kidney beans can be used)
1 Tbsp. yeast extract or marmite
1. Sauté onion in a saucepan on medium heat till lightly golden.
2. Add water, yeast extract, oregano, bay leaves and black pepper.
3. Simmer for 20 minutes.
4. Add more water if necessary.
