Fresh Quick Pea Soup Recipe is Delicious Too

How about a quick peas soup for lunch? Yes, this is a very quick, delicious soup that is nutritious too. All of the ingredients in this soup are healthy.

Quick Pea Soup Recipe

Ingredients:

1 cup fresh or frozen peas
1 cup water
1 cup almond milk or rice milk
1 Tbsp Olive Oil
1 tsp Vege salt or Spike
Sprig of dill (optional)

Directions:

  1. Simmer the peas in 1 cup of water till soft.
  2. Put all ingredients except for a handful of peas into a blender.
  3. Puree.
  4. Garnish with a few peas and dill on top of each bowl and serve.

What I think is the difference is that this is the first time I had organic frozen peas and I am sure they taste better. The other thing about this soup is that it is surprisingly hardy and very filling.
