Tasty Millet Coconut Pudding with Brazil Nuts

This creamy millet coconut pudding is extra delicious with the addition of Brazil nuts. It is gluten-free, vegan and easy to make with all healthy ingredients.

Millet Coconut Pudding Recipe

Ingredients:

2 cup cooked Millet (see How to Cook Perfect Millet)
2/3 cup sultanas or raisins
2 cups unsweetened coconut milk
1/2 cup Brazil nuts, chopped
3 Tbsp coconut oil
1/2 tsp light liquid Stevia
1 – 2 tsp cinnamon
1/4 tsp of Himalayan salt
A little canned coconut milk for topping (optional)

Directions:

  1. In a pot add the coconut milk and raisins.
  2. Simmer for 15 minutes.
  3. Add the rest of ingredients to the pot.
  4. Simmer for another 30 minutes.
  5. Now serve and enjoy your millet coconut pudding.

It is best to use Organic Hulled Millet
