Crispy Okra Is A Wonderful Tasty Vegetable For Your Meal

Crispy okra is so yummy with a flavour that is amazing.  Fresh okra with a beautiful golden brown color and a crunchy texture is a special addition to any meal! Also, it is gluten-free and vegan too, no eggs or wheat flour. This is for sure my favourite okra recipe.

Crispy Okra

The main ingredient okra in this crispy okra recipe is a very unique and not well-known vegetable in the west. In India, it is known as bhindi.  It is often dismissed because of its sliminess but when prepared well it is delicious and it is one of the superfoods.

Okra is a high-quality protein; it has an amino acid composition comparable to soybeans and the protein efficiency ratio is higher than soybeans. It is a top vegetable protein food.

It has good soluble fiber which helps reduce cholesterol and also lessens the chance of heart disease. It kills breast cancer cells and is also good for gastritis while boosting the brain’s cognitive abilities.

Cornmeal is a delicious gluten-free grain that has been around for centuries.  There are so many recipes from grits and polenta to porridge and tortillas.  It is a great source of fiber, has cancer-fighting properties, protein, and is cholesterol-free. It is made from ground dried corn; when it’s finely ground it is corn flour. The coarser ground corn is cornmeal; it has a little of the husk and germ of the corn kernel. The cornmeal helps add that crunch to this crispy okra.

Brown Rice Flour has become a staple in my baking adding fiber and nutrition.   It assists in weight loss, helps reduce cholesterol and balances energy.  It is low cost and adds a somewhat dry gritty crumbly texture.

Ingredients

  • 2 flax meal eggs *see how to make this below
  • 12 fresh whole okras
  • 1/2 cup brown rice flour
  • 1/2 cup yellow cornmeal
  • 1/2 tsp Himalayan salt
  • 1/2 tsp paprika
  • coconut oil for frying as needed

Instructions

  • *Make the vegan eggs in a medium bowl and let sit for 10 minutes.
  • Cut off the ends of the okra and slice the okra into 1/2 inch pieces.
  • Put the okra into the bowl of vegan eggs.
  • Mix the rice flour, cornmeal, salt and paprika into a small bowl.
  • Then dip the okra into the cornmeal and flour coating.
  • Heat the oil in a frying pan over medium-high heat.
  • Fry the okra until golden brown.
  • Remove from the pan and drain on paper towels.
  • Enjoy your crispy okra as an appetizer or as a side dish for a meal.

Notes

*How to make flaxmeal egg replacement: To make 2 flax meal eggs place 2 Tbsp of flax meal in a cup and mixed with 6 Tbsp of warm water and let it sit for 10 minutes.
