Mango Chutney is Tasty and Healthy Too

Sugar-free chutney is a delicious addition for your curry meal.

This mango chutney recipe really is delicious and so healthy too. It is made without white sugar and white vinegar so it is much healthier. The cayenne is optional for extra spice for those of us who don’t like spicy food.

Mangos the King of Fruits taste so good that people forget they are also healthy! Something about mangoes makes them luxurious to add to recipes.

Research has shown the mango fruit helps protect against cancer, and it boosts the immune system while being great for the eyes with the high vitamin A content.  It also has high levels of fiber, pectin and vitamin C which helps to lower serum cholesterol levels. They can be used both internally and externally for the skin and also help to alkalize the whole body.

To get the most health benefits from Garlic, let it sit for a minimum of 5 minutes, after cutting and before eating or cooking.  Waiting for 5 – 10 minutes allows the health-promoting allicin to form.  If you do not let it sit, allicin is never formed, so it is worth the wait.

Mango Chutney

Ingredients

  • 2 large mangoes
  • 4 dates
  • 2 garlic cloves
  • 1/2 cup light raisins
  • 1 Tbsp fresh ginger root
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/2 tsp cayenne pepper optional
  • 1/2 tsp sea salt
  • 1/2 cup apple cider vinegar

Instructions

  • Peel and chop the mangoes.
  • Remove the pits from the dates and chop.
  • Mince and mash the garlic.
  • Peel the ginger root and chop finely.
  • Place all of the ingredients into a medium-size saucepan.
  • Simmer on low heat until the mango is very soft for about one hour.
  • Stir often because as the mixture reduces, it becomes thick and can stick to the bottom of the pot and burn.
  • When finished cooking, if there are still big chunks of mango, break them up with a fork.
  • Cool and serve the mango chutney with your favorite curry!

Notes

The mango chutney will keep well in the refrigerator for 4 to 6 weeks.
