Mango Squares Are a Very Special Yummy and Healthy Treat

Mango squares are so delicious and mangoes are full of health benefits. This is an easy gluten-free, vegan, and white sugar-free dessert. Mangos the King of Fruits taste so good that people forget they are also healthy! Something about mangoes makes them luxurious to add to recipes.

Research has shown that mango fruit helps protect against cancer, and it boosts the immune system while being great for the eyes with the high vitamin A content.  It also has high levels of fiber, pectin and vitamin C which helps to lower serum cholesterol levels. They can be used both internally and externally for the skin and also help to alkalize the whole body.

Ingredients:

2 1/2 cups dried mangos, chopped
1/2 cup water
1/2 cup vegetable oil or coconut oil
1/4 cup rice syrup or honey
1/2 tsp. salt
2 1/2 cup oats
1 cup brown rice flour or whole wheat flour

Directions:

  1. Simmer mangos in water till soft.
  2. Set aside.
  3. In a separate bowl, mix vegetable fat, honey, and salt.
  4. Add oats and flour.
  5. Mix well.
  6. Pat 2/3 of the mixture into an 8 X 8 pan.
  7. Spread the apricot mixture on top of the oat mixture.
  8. Then sprinkle the other 1/3 of the oat mixture on top of the mangos.
  9. Lightly press down.
  10. Bake in a preheated oven at 400º F. for 25 to 35 minutes.
