Wild Blueberry Squares Are Delicious and Healthy

Refined sugar-free and full of nutritious ingredients.

These wild blueberry squares are so delicious. I have always loved date squares but these wild blueberry ones take squares to a whole other level.

What is so good about these squares is that there is no refined sugar in them, just a little healthy rice syrup to hold them together. They are full of very healthy superfoods so are good for you!

Wild blueberries are a very healthy fruit and are almost always found in the freezer section of most grocery stores. I love wild blueberries and almost always have some in my freezer.

Ingredients

  • 2 1/2 cups Wild Blueberries
  • 1/2 cup Coconut Oil
  • 1/4 cup Rice Syrup
  • 1/2 tsp Himalayan Salt
  • 1/2 cup Oats
  • 1 cup Brown Rice Flour
  • 1/2 cup Walnuts chopped

Instructions

  • In a bowl, mix together the coconut oil, rice syrup, and salt.
  • Add oats and flour.      
  • Mix well.
  • Pat 2/3 of the mixture into an 8 X 8 pan.
  • Sprinkle the blueberries on top of the oat mixture.
  • Then sprinkle the other 1/3 of the oat mixture on top of the blueberries. 
  • Lightly press down.
  • Bake in a preheated oven at 400º F. for 25 to 35 minutes.
