Wild Blueberry Squares

  • 2 1/2 cups Wild Blueberries
  • 1/2 cup Coconut Oil
  • 1/4 cup Rice Syrup
  • 1/2 tsp Himalayan Salt
  • 1/2 cup Oats
  • 1 cup Brown Rice Flour
  • 1/2 cup Walnuts chopped


  • In a bowl, mix together the coconut oil, rice syrup, and salt.
  • Add oats and flour.      
  • Mix well.
  • Pat 2/3 of the mixture into an 8 X 8 pan.
  • Sprinkle the blueberries on top of the oat mixture.
  • Then sprinkle the other 1/3 of the oat mixture on top of the blueberries. 
  • Lightly press down.
  • Bake in a preheated oven at 400º F. for 25 to 35 minutes.
