Creamy Butter Bean Dip
- 1 cup butter beans cooked
- 1 Tbsp olive oil
- 2 Tbsp lemon juice
- 1/2 onion finely chopped
- 1/2 Garlic Cloves finely chopped
- Himalayan salt to taste
- few sprigs of fresh parsley chopped
- olives or green onions for garnish
- First cook beans according to the recipe on how to cook beans.
- Mash the butter beans until they are smooth and creamy.*
- Finely chop the onions and garlic.
- Add the rest of the ingredients.
- Mix together until well-blended.
- Adjust seasoning to taste (salt, Lemon juice, olive oil, garlic).
- If you are using parsley as your garnish, finely chop a few springs of parsley.
- Put into a decorative bowl and garnish with green onions or olives or parsley.
- Serve your butter bean dip with corn chips, wholemeal crackers or slices of raw vegetables which is my favourite way to eat a dip.
