Creamy Butter Bean Dip
- 1 cup butter beans cooked
- 1 Tbsp olive oil
- 2 Tbsp lemon juice
- 1/2 onion finely chopped
- 1/2 Garlic Cloves finely chopped
- Himalayan salt to taste
- few sprigs of fresh parsley chopped
- olives or green onions for garnish
- First cook your beans.
- Mash butter beans until smooth and creamy.*
- Add the rest of the ingredients.
- Mix together until well-blended.
- Adjust seasoning to taste (salt, Lemon juice, olive oil, garlic).
- Put into a decorative bowl and garnish with green onions or olives or parsley.
- Serve you butter bean dip with corn chips or wholemeal crackers.
