This is such a healthy dip filled with superfood ingredients.

Creamy Butter Bean Dip

Ingredients

  • 1 cup butter beans cooked
  • 1 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1/2 onion finely chopped
  • 1/2 Garlic Cloves finely chopped
  • Himalayan salt to taste
  • few sprigs of fresh parsley chopped
  • olives or green onions for garnish

Instructions

  • First cook your beans.
  • Mash butter beans until smooth and creamy.*
  •  Add the rest of the ingredients.
  • Mix together until well-blended.
  • Adjust seasoning to taste (salt, Lemon juice, olive oil, garlic).
  •  Put into a decorative bowl and garnish with green onions or olives or parsley.
  • Serve you butter bean dip with corn chips or wholemeal crackers.

Notes

* you could use a blender to mash the beans but when I developed this recipe I did not have one by choice so I mashed them by hand! Garnish the dip with Green onions, olives or parsley.
