First cook beans according to the recipe on how to cook beans.
Mash the butter beans until they are smooth and creamy.*
Finely chop the onions and garlic.
Add the rest of the ingredients.
Mix together until well-blended.
Adjust seasoning to taste (salt, Lemon juice, olive oil, garlic).
If you are using parsley as your garnish, finely chop a few springs of parsley.
Put into a decorative bowl and garnish with green onions or olives or parsley.
Serve your butter bean dip with corn chips, wholemeal crackers or slices of raw vegetables which is my favourite way to eat a dip.
