Pumpkin Sauce

This pumpkin sauce really is a delicious addition to a meal. It is full of healthy Superfoods and it is so very easy to make. There is nothing that says fall more than pumpkin,
Feeling good is good enough for me that is why I love pumpkin sauce and Bobby Mcgee.
A pumpkin sauce for your vegetables or gains is sure to get you in the mood for fall. This large vegetable is loved by everyone! Whether you are growing a 2,623.5 pound pumpkin, eating a delicious bowl of Pumpkin Stew or going for a second piece of pumpkin pie we know it is a special food in the fall.

Ingredients

  • 1 1/2 cup pumpkin
  • 3 Tbsp tahini
  • 1/4 cup water
  • 1/2 - 1 tsp Spike Seasoning
  • coriander fresh or dried, optional
  • parsley fresh or dried, optional

Instructions

  • Steam the pumpkin till it is soft.
  • Take it out of the steamer and let it cool.
  • When it is cool, scoop out the pumpkin from the skin.
  • Now put the pumpkin in a bowl.
  • Mash it up.
  • Mix in the tahini.
  • Then mix in the water and Spike seasoning to taste.
  • Put it into a small pot and warm it up.
  • You can now sprinkle your choice of herbs or spices on it if you choose. Parsley or coriander add a nice touch.
  • Now serve your pumpkin sauce on top of vegetables or a grain.
