Fruit Compote

This is a delicious fruit compote and it is so easy to make.

Ingredients

  • 1 1/2 cups dried fruit, prunes, apricots, pears, raisins
  • 1 small lemon
  • 1/2 cup whole raw almonds
  • water

Instructions

  • Juice the lemon.
  • Cover the dried fruit with water and lemon juice.
  • Soak the dried fruit for 12 – 24 hours.
  • In a separate bowl, cover the almonds with water.
  • Soak the almonds overnight.
  • Drain the water off the almonds.
  • Mix the almonds in with dried fruit mixture.
  • Serve the compote with pudding* - pour on top of fruit and almonds.
  • Leave it to cool a little and serve it warm or cold.
