Carrot Salad with Sunflower Seeds

This carrot salad with black currants and sunflower seeds is especially unique and so tasty. Also, it is filling too.

Ingredients

  • 3 carrots
  • 1/4 cup black currants
  • 1/4 cup sunflower seeds
  • Few Sprigs cilantro
  • sesame seeds optional for garnish

Instructions

  • Grate the carrots.
  • Finely chop the cilantro.
  • Lightly toast the sunflower seeds on a pan in the oven.
  • Put the grated carrots into a wide salad bowl.
  • Toss the salad with my Olive Oil Salad Dressing to taste.
  • Sprinkle, currants, cilantro, sunflower seeds, and sesame seeds.
  • Serve and enjoy.
