Spinach Salad with Oranges and Pecans

This spinach salad is a sneaky way to get that powerfood into your diet. Also, all the ingredients are very healthy. It is an easy to make and very tasty; everyone I have served it everyone loves it.

Ingredients

  • 1 pound fresh spinach
  • 1/4 cup pecans
  • 1-2 oranges
  • 1 small red onion optional or to taste
  • 2 Tbsp Lemon juice
  • 1/4 cup olive oil
  • Few drops stevia to taste
  • Few drops braggs to taste

Instructions

  • Wash and trim the spinach; pat dry with paper towels.
  • Lay the pecans on a tray and roast them on low heat in the oven until they are golden brown.
  • Peel and slice the orange.
  • Finely slice the onion.
  • Combine the lemon juice, oil, stevia, and Tamari or Braggs in large bowl. 
  • Now, toss the spinach, oranges, onion, and nuts with dressing.
  • Serve and enjoy.
