Vegan Papaya Pudding

Ingredients

cups
papaya

tsp
vanilla extract
1/2
cup
cashew nuts
1/2
Tbsp
chia seeds
1/4
cup
coconut milk
1
tsp
honey or a few drops of liquid stevia
Instructions
Soak the cashew nuts in a bowl of water for 4 hours before you want to make this recipe.
Chop the papaya and put aside 1/2 a cup for use later.
Blend the papaya in a blender.
Add the cashews, chia seeds, honey, coconut milk and vanilla, and blend until creamy
Put the mixture in the refrigerator for 20 to 40 minutes to thicken
Simply mix the half cup of chopped papaya into the pudding.
Now enjoy your creamy papaya pudding.
