Vegan Sandwich with Avocado, Cucumber and Pumpkin Seeds

  • 2 slices gluten-free bread
  • 1/2 avocado sliced
  • cucumber slices
  • a sprinkle of roasted pumpkin seeds
  • a sprinkle of flax seeds
  • a handful of sprouts of your choice


  • Toast your bread in a toaster or oven how you like it.
  • Place the sliced cucumber on it.
  • Then add sliced avocado onto each slice of toast.
  • Sprinkle with flax seeds,¬†pumpkin seeds, and sprouts.
