Millet Pecan Pudding

Once you have cooked the millet, this Millet Pecan Pudding is very simple to make.  It is for sure tasty and healthy without sugar so you can have it for breakfast. It has no milk or eggs which makes it a great vegan dessert. Also, what I like is that there is no sugar added.

Ingredients

  • 2 cups organic hulled millet
  • 1/2 cup sultanas or raisins
  • 2 cups unsweetened coconut milk unsweetened almond milk works too
  • 1/2 cup pecans toasted and coarsley chopped
  • 2 Tbsp coconut oil
  • 1/2 tsp light liquid stevia
  • 2 tsp cinnamon
  • pinch Himalayan salt

Instructions

  • First, cook your millet. Learn How to Cook Perfect Millet, see the link below.
  • In a pot, add the coconut milk and raisins.
  • Toast the pecans and coarsely chop almost all of them. Leave a few whole to put on top of the pudding for garnish.
  • Simmer the milk and raisins on low heat for 15 minutes.
  • Add all the remaining ingredients to the pot except for pecans.
  • Simmer for 30 minutes.
  • Mix in the pecans and serve you yummy millet pecan pudding.
