Okra Sautéed with Cashews

Okra sautéed with Cashews makes for a luxurious meal.  Adding cashews to this okra dish adds a delicious crunch and the garlic adds a spicy taste to this tasty meal.  Fresh green okra is a great vegetable and extra tasty made this way.  It is also a complete meal when you add a whole grain like quinoa or brown rice.  And of course so very tasty.

Equipment

Ingredients

  • 3 cups okra
  • 1/3 cups cashews roasted
  • 1 tsp almond oil
  • 1-3 cloves garlic chopped
  • lemon or lime zest
  • Himalayan salt to taste
  • Black pepper to taste

Instructions

  • Make sure you have roasted the cashews before using them in this dish.
  • Cut off both the ends of the okra.
  • In a large frying pan, heat the almond oil.
  • Now, add the okra to the pan, sprinkle it with Himalayan salt and black pepper and fry on high heat, stirring, until tender which will be about 10 minutes.
  • Add the chopped garlic and cook over moderate heat until softened for about 3 minutes.
  • Stir in the cashews and lemon or lime zest.
  • Now enjoy your okra sauteed with cashews dish for dinner.
