Bhindi Masala An East Indian Delight

This bhindi masala is a very special dish from India and the first way I enjoyed okra.  The tomatoes add an extra tastiness to the recipe. My friend, Karuna Sanghvi sent me this delicious recipe.

Okra is a very unique and not well-known vegetable in the west. In India, it is known as bhindi.  It is often dismissed because of its sliminess but when prepared well it is delicious and it is one of the superfoods.

Okra is a high-quality protein; it has an amino acid composition comparable to soybeans and the protein efficiency ratio is higher than soybeans. It is a top vegetable protein food.

It has good soluble fiber which helps reduce cholesterol and also lessens the chance of heart disease. It kills breast cancer cells and is also good for gastritis while boosting the brain’s cognitive abilities.

Almond oil has a high smoke point making it great for stir-frying and sautéing. It is good for High Heat Up To 460F.  What I like about it is that it has a light, clean flavor that does not alter the taste of the foods I am using it to cook with.

Bhindi Masala Recipe

Ingredients:

12 Okras
1 Onion
2 Tomatoes
3 tsp Oil
Pinch of Mustard and fenugreek seeds
Pinch of asafoetida (optional)
1/4 tsp turmeric
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp red chili powder (optional if you don’t like hot spicy food)
Himalayan Salt to taste
Water

Directions:

  1. Cut off both ends of the okra, and then slice into one-inch pieces.
  2. Slice onions and dice the tomatoes and keep separately aside.
  3. Temper one teaspoon oil with mustard, fenugreek, and asafoetida.
  4. Add 2 more teaspoons of oil; add onion and sauté until translucent.
  5. Add the tomato and soften.
  6. Now add the okra and let cook for a minute.
  7. Add ¼ cup water and allow it to cook. If needed, you can add more, but don’t make it too mushy or watery.
  8. Add turmeric, cumin powder, coriander powder, red chili powder.
  9. Salt to taste.
  10. Cook for 5 to 7 minutes or till water dries out.
