Raw Carob Pudding

I was inspired to make this for my friend Edward; he eats 100% raw food and loves carob. The first try I made was good but not as good as I knew it could be so this second try is delicious.  

Ingredients: 

1 cup Pears, chopped
1/4 cup Avocado
1/4 cup Raw Carob powder, sifted
1 Tbsp Walnuts, chopped  

Directions: 

  1. Blend pears till smooth on the highest setting (liquefy)
  2. Add avocado to blender and blend.
  3. Add in carob powder and blend. It maybe a little challenging to do this so simply mix in well if it will not blend. We do not want to add water.
  4. Pour into a bowl and sprinkle top with walnuts.

Strawberry Crumble

This delicious crumble recipe is sugar-free, gluten-free, and dairy-free.  I make this from the strawberries I grow, which are of course organic. It is important to use organic strawberries as they are one of the Dirty Dozen.

Base Recipe

Ingredients:

2 cups strawberries (fresh is best but frozen works)
2 cups apples
½ tsp liquid stevia
1/3 cup water

Directions:

1.    Core and slice apples.
2.    Simmer apples with water in a covered pot.
3.    Place apples in a baking dish.
4.    Mix in strawberries
5.    Sweeten to taste with stevia.

Crumble Topping

Ingredients:

1 ½ cups rice flour
1 cup oats
½ tsp. salt
1/3 cup coconut oil
¼ cup rice syrup
½ tsp Stevia in 2 Tbsp water

Directions:

1.    Mix dry ingredients together
2.    Mix oil and rice syrup and add to dry ingredients.
3.    Mix thoroughly with fingers.
4.    Sprinkle on top of fruit and pat down.
5.    Bake at 350º F. oven for approximately 40 minutes.
