This is a very filling meal with the addition of pomegranate and cashews creating an exotic delicious dish. The good news is that it is exceptionally easy to make in minutes.
1 cup cooked red quinoa or any colour of quinoa
Handful of pomegranate seeds
Handful of roasted cashews
Few fresh mint leaves (optional)
Simply mix all ingredients together and enjoy.
