Yummy Pesto Pasta Green Beans

This is a wonderful Italian dish made with pasta and green beans which is easy to make and great to eat.

Ingredients:

2 cups green beans, trimmed and halved
2 cups brown rice pasta
1 cup pesto sauce
2 Tbsp Extra virgin olive oil

Directions:

  1. Trim and halve your green beans.
  2. Steam green beans for about 10 minutes.
  3. Remove top of the steamer with beans in.
  4. Make sure there is enough water in the steamer to cook the pasta.
  5. Add pasta to boiling water and cook to desired tenderness.
  6. Then drain pasta, keeping 1/2 cup of the pasta water.
  7. Return pasta to empty pot along with the cooked beans.
  8. In a mixing bowl, combine 1 cup of basil pesto with a ½ cup of the pasta water and 2 tbsp olive oil.
  9. Pour the sauce over the pasta and beans, mix in.
  10. Serve immediately.
