Raspberry Lemon ‘Vinaigrette’

This dressing is called a `vinaigrette’ but it does not have any vinegar in it.  Vinegar is not an ingredient I use as it is so acidic; I use lemon juice which is healthier and alkaline forming.

My garden is so abundant with raspberries that I am inspired to get creative in my kitchen.  After developing several recipes this is my favorite.

This is great with a salad made of romaine, arugula, raspberries, grated carrots and red onion.

Ingredients:
1 cup olive oil
1/8 cup lemon juice
1 cup raspberries
1/2 cup water
12 drops Light Stevia (Sundew is my favorite) to taste

Yogurt Dip

Ingredients:

½ cup yogurt (soya, goats or cow’s milk)
½ tsp spike seasoning (can be purchased at health food store)
½ tsp mustard
Few drops of stevia

Directions:
1.    Mix all of ingredients together in a jar.
2.    Keep refrigerated and use within 5 days.

Note: do not make this in a blender; it will become like milk.

Greens Are Good for Us

The very simplest place to start with getting greens into our diet is to eat one big salad each day and make sure it is filled with mostly greens.  

Greens are full of vitamins A, K, D, and E which are fat soluble. To absorb these vitamins make sure to add a teaspoon of dietary fat, such as butter, olive or coconut oil, nuts, cheese or salad dressing. This will make sure your body absorbs all of the vitamins in the greens. Vitamin K helps calcium and phosphorus bind onto the bone protein matrix.

Ingredients:
1 handful, spinach
1 handful, arugula
½ head, red leaf lettuce
½  head, green leafy lettuce
1 medium bunch of parsley
3 Celery pieces, chopped
1 medium cucumber, sliced in rounds
¼ cup pine nuts

Directions:
1. Mix greens together in a bowl.
2. Top with celery, cucumber and pine nuts.
3. Serve with Mint salad dressing.

TIP:  If you are planning on this lasting for the next day, do not mix the cucumber in.  Put it in a bowl on the side and add to each serving of salad.  A mix of the basic ingredients without the cucumber will last 3 days in the fridge.

 Here is a salad dressing with greens already in it!  This is a refreshing tasty dressing with a little mint flavour.

LEMON-MINT SALAD DRESSING

Ingredients:
1 ¼ cups olive oil
¼ cup lemon juice
2 tbsp. fresh mint (or 2 tsp. dried)
Salt to taste
Few drops of stevia

Directions:
1.  Blend all ingredients.
2.  Add salt to taste and Stevia to taste and re-blend.

Vegan Salad Dresssings

TAHINI DRESSING
I love this dressing for it’s simplicity but mostly because it gives me a creamy dressing that is vegan.

Ingredients:
10 tbsp. Tahini
5 tbsp. lemon juice
1 ½ tsp. Braggs and mixed herbs
or ½ tsp salt and ½ tsp curry powder
7 – 10 tbsp. water
Directions:
  1. Mix 1 tablespoon of lemon juice at a time with Tahini in a jar.
  2. Add soya sauce and enough water till creamy.
  3. Season with favorite herbs.
  4. Serve on top of fresh green salad of lettuce or watercress.
TOMATO DRESSING
This is a very light dressing…excellent for those wanting a low fat dressing.

Ingredients:
3 tbsp. olive oil
2 tbsp. lemon juice
1 tomato
1 tbsp. fresh basil (or ½ tsp. dried)
1 tbsp. fresh chives (or 1/2 tsp. dried)
Few drops of stevia or a little honey
Braggs to taste

Directions:
  1. Put in all ingredients in a blender and blend till smooth.
  2. Add Braggs and stevia to taste.

Home Made Salad Dressings

I love to eat salads. It is the salad dressing that makes it healthy or unhealthy.

A healthy salad is often ruined by drenching it with a highly processed salad dressing from the super market which is not healthy as it is filled with artificial flavorings, colourings, preservatives, sugar, and white distilled vinegar (which is hard on the digestive system).

I always make my own salad dressings. This is a simple base recipe that you can make up different each time with a variety of herbs or types of salty flavours. This is the first of many recipes to be posted here.

OLIVE OIL/LEMON JUICE SALAD DRESSING salad Home Made Salad Dressings

Ingredients:
1 cup Olive oil
1/3 lemon juice
2 -4 drops Stevia
1/4 tsp Braggs
Optional: Dried herbs of your choice and garlic.

Directions:
  1. Blend all above ingredients in a Blender.
  2. Taste and add more of any of the ingredients to your taste.

OIL & Balsamic Vinegar SALAD DRESSING

Ingredients:
1 cup olive oil
2 Tbs Balsamic vinegar
3 Tbs Lemon Juice
1/4 tsp. salt
1 – 3 tsp. basil
1/2 – 1 tsp. marjoram
1/4 tsp. rosemary
1/8 tsp Stevia

Directions:
1.  Put all ingredients into the blender.
2.  Blend together.
